Sadly Italian soda doesn’t have so much to do with Italy but seems to have entered the world as a marketing ploy by Torani to sell their flavored syrups.

Where did Italian Sodas Start?
On the other hand, the Torani Syrup Company WAS started by Rinaldo and Ezilda Torre who were at least Italians though living in the USA. They had the bright idea to bring back their favorite Italian syrups after a visit back to their roots in Italy.
They bought the recipes with them and introduced the world to Torani Syrups or cordials as they are alternatively known.
The only problem with this lovely story is that it is really contrived to create a story for the Torino brand.
Soda Fountains were popular across America and Coca Cola well established a long time before the Torre’s came onto the scene.
You might say that because they were Italian, had syrups to sell and merged the idea of fresh summer lemonade with carbonated water, changing the lemonade to their own sugar-sweetened syrups and calling them Italian Sodas, that in fact, they were the creators of the moniker.
Anyway, the name stuck and it is a nice way to justify a fancy price for carbonated fruit squash.
What is an Italian Soda?
An Italian Soda is a cold drink made from carbonated water served over flavored syrup in ice. If you add half & half, cream or milk then it is no longer an Italian Soda but instead a French Soda or Italian Cream Soda.
So if you see something like the beautiful image above then run! It is an Italian Cream Soda that will curdle quicker than Ariel loses her voice but will sadly never be the same again.
Who wants to drink something that resembles milk that is well past its sell-by date even if it is dressed up with an Italian name?
In Thailand, we love things that look nice and especially if they don’t cost much. We also like things with plenty of taste.
So you see Thai food that has plenty of colors and is very tasty, even though sometimes quite spicy. But then not all Thai food is spicy!
Why Lychee Blue Tea Italian Soda?
Keeping in the spirit of things and because blue is such a beautiful color, we decided to give you the fantastic Lychee Blue Tea Italian Soda.
We love our Butterfly Pea Flower Blue Tea Recipe but as it’s my daughter’s birthday we thought to make something even tastier.
We wanted something that tastes amazing but also looks special and fun. And it had to be quick to make.
Well, Italian Soda made with tasty Lychee Cordial fitted the bill for taste and the blue Ternatea makes it look fantastic. Blue tea is also incredibly easy to make.
To make this recipe you first need to make the blue tea.
How to Make Blue Tea Step By Step
Tea Step 1 Filter Hot Water through Blue Ternatea Flowers
Get hold of some amazing blue ternate flowers otherwise called butterfly pea flowers. You can buy fresh ones or use dried butterfly tea flowers which are readily available online – the method is the same’.
Simply take about 10 flowers and pour over about 1/2 cup of boiling water as if making regular tea.
Tea Step 2 Steeping the Blue Tea
Stir thoroughly and allow to sit for about 5 minutes and then strain off the blue tea into a separate jug and throw away the used flowers.
Allow cooling. This tea will last for several days in the refrigerator and is better stored covered to stop other food in the fridge affecting it.
How to Make Lychee Blue Tea Italian Soda
Soda Step 1 Fizzing Up the Lychee Syrup
Take 1.5 oz or 50ml of Lychee Syrup in a measuring container and pour in cold carbonated water to make up one cup of carbonated cordial. Stir the mixture slowly but thoroughly to mix well the syrup and soda.
Soda Step 2 Cooling it Down
Take a 20 oz glass or plastic cup and top up full to the brim with crushed ice. Gently pour in the Lychee Soda leaving about 3/4″ or 20mm at the top as space for the blue tea topping.
There should be enough ice to sit above the Lychee Soda but if not then top up with more ice.
Soda Step 3 Making it Pretty
Measure out 1.5 oz or 50ml of the Blue tea you made and gently pour onto the top of the ice. If you are gentle and the ice is above the level of the soda as directed in Step 2, then it will sit on top of the Lychee drink without mixing for a lovely effect.
Add in a little lime juice to give the drink a little kick and serve with a smile and a straw.
That’s it you are done!
Hand the Lychee Italian Soda to the kids and pick up your party cocktail – everybody happy and involved!

- 10 flowers Butterfly Pea Flowers
- 0.5 Cup Hot Water
Lychee Italian Soda With Blue Tea
- 1.5 oz Lychee Syrup
- 1.5 oz Blue Tea
- 7 oz Soda Water
- 1 Slice Lime

Instruction For Blue Tea
- Place around 10 blue clitoria ternatea flowers in a tea strainer sock and pour over the hot water into a cup. Use a spoon to press the blue flowers to get full color and set aside to cool.
Instruction For Lychee Italian Soda With Blue Tea
- Measure the Lychee syrup or cordial into a measuring jug then add soda water. Stir to mix well
- Pour the Lychee Soda into a full cup of ice. Top up the ice if necessary and then gently pour blue tea on the top. Add a squeeze of lime on top {the Ice will stop blue tea going down and makes a nice color contrast layer at the top}
